Recipe: Crudites with Crab Mayonnaise (6 -10)
Ingredients...
Crisp Fresh Vegetables e.g.radish
peppers,cucumbers,spring onions,
fennel, celery
And/ or lightly cooked vegetables
e.g. asparagus, green beans,new
potatoes, salsify
And/or cooked shellfish e.g. prawns
scallops, lobster.
MAYONNAISE...
4-6oz fresh crabmeat, brown or white
2 tsps wholegrain mustard
a few drops tabasco
a few drops soy sauce
7 tbsps mayonnaisse
3 tbsps whipping cream, whipped
salt
Instructions...
1) Mix all the mayonnaise ingredients together. Taste and
adjust the seasoning. Pile into a bowl. Serve at room
temperature.
2) For a simple first course serve with crisp raw
vegetables, trimmed as appropriate so they can be dipped
into the mayonnaise.
3) For a more elaborate first course or as part of a main
meal add the lightly cooked vegetables, warm or cold,
and lightly cooked shellfish or hard boiled quails eggs.
