Recipe: Salad with Cashew Nut dressing (4 - 6)
Ingredients...

6 oz thin green beans cut into 1" lengths
4 oz carrots cut into julienne strips
1 green papaya peeled seeded and cubed
4 oz radishes, sliced
3 sticks celery thinly sliced
1o mint leaves torn up
8 oz shelled cooked prawns or.. 8 oz shredded cooked chicken

Dressing...

1 garlic clove
1/2 tsp salt
1/4 tsp cayenne pepper
5 tbsp rice wine or white wine vinegar
4 tsp light muscovada sugar
3 spring onions finely chopped
2 oz cashew nuts finely chopped

Instructions...

1) Blanch beans and carrots in lightly salted water for 2 mins. Drain and refresh. Cool.

2) Steam the papaya until just tender.

3) To make the dressing crush the garlic with the salt and mix with the remaining dressing ingredients.

4) Just before serving toss all the ingredients with the dressing.
