Recipe: Thai Chicken Salad (2)

Ingredients...

1 large chicken breast
olive oil
4 tbsps lime juice
2 tbsps fish sauce
1 tbsp light soy sauce
4 tbsps groundnut oil
1 tsp sesame oil
1 tsp sugar
1 garlic clove, finely sliced
1 tbsp chopped mint
1/2 cucumber, peeled
1 large carrot, scrubbed
small handful coriander leaves
1 red chilli, seeded & finely sliced
1 red onion, chopped finely
4 oz beansprouts, washed

Instructions...

1) Brush the chicken with a little oil and season with sdalt and pepper.Saute until tender then shred into 1/2 " strips.

2) Mix the lime juice with the fish sauce, soy and groundnut oil.Add the sesame oil, garlic, sugar and chopped mint. Season with black pepper.

3) Slice the carrot and the cucumber finely, shaving with a vegetable peeler. Put in a bowl with the dressing. Add the coriander, chilli, chicken and beansprouts and toss well. Serve immedietely.
