Recipe: Warm New Potato Salad with Taleggio & Rocket (2)
Ingredients...
1 lb new potatoes
2 handfulls rocket washed & shaken dry
(or raddichio or water cress)
1 tbsp extra virgin olive oil
7 oz taleggio or other soft cheese (eg brie)
salt & pepper
Instructions...
1) Cook potatoes in boiling salted water until tender.
Drain well.
2) Toss leaves in the olive oil and put on 2 ovenproof
plates. Slice each potato in half and scatter over the
salad leaves, out side up.
3) Slice the cheese thinly and lay over the potatoes. Set
the plates under a preheated grill and cook for about a
minute until the cheese starts to ooze. Season and serve
immediately.
