Recipe: Warm Pasta Salad with Peppers, Tomato & Basil (6)

Ingredients...

6 oz cherry tomatoes, halved or quartered
6 oz yellow pear tomatoes, halved
1/2 cup finely chopped herbs
2-3 tbsps small capers, rinsed
3 tbsps shallots, finely diced
1 1/2 cups mixed peppers, thinly sliced
1/2 cup nicoise or gaeta olves, pitted
small whole purple basil leaves to garnish
6 tsps olive oil
2 strips lemon peel, sliverd
salt
pepper
8-12 oz pasta shells or fusilli
Lemon juice or vinegar to taste
4 tbsps freshly grated parmesan

Instructions...

1) Combine tomatoes, herbs, capers, shallots, peppers, olives, olive oil and lemon peel in a large bowl. Season with salt and pepper. Stir and stand while you cook the pasta.

2) Bring a large pot of water to the boil and add 1 tbsp salt.Ad the pasta and stir. Cook until al dente then drain.Add the pasta to the bowl and fold together gently.

3) Season with salt and lemon juice or vinegar to taste. Just before seving garnish with the cheese and basil. Serve hot, warm or at room temperature.
