Recipe:  Sweet Potato Surprise



Ingredients:

2 to 3 lbs. Sweet Potatoes (cooked, then peel)
2 Eggs, slightly beaten
1 bag large Marshmallows
Corn flakes, crushed
1 c Brown sugar
1 c Half & Half
1 tsp. Flour
1/2 tsp. Vanilla

Instructions:

Mash potatoes in a bowl.  Add eggs.  Form potato mixture into individual
balls around a marshmallow. Roll the ball in crushed corn flakes. Place
on a
jelly-roll pan that has been lightly sprayed with nonstick cooking
spray.

Bake in a preheated 350 degree oven, 10-15 minutes, until potato balls
pop
open.

Topping:

In a saucepan or microwave safe bowl, mix sugar, cream, flour, and
vanilla;
bring to a boil.  Pour over potato balls; keep warm in oven until ready
to
serve.  This dish is great for the holidays.
