CINNAMON CARROT BREAD

(A delicious carrot bread!)

INGREDIENTS:
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 3/4 cup oil
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1/8 teaspoon salt
  • 1 cup grated carrots
  • 1/2 cup chopped pecans, (optional)
  • 1/2 teaspoon vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees.  Grease and flour a 8 and 1/2" by 4 and 1/2" loaf pan.  In a large bowl, beat together the sugars and oil. In another bowl sift flour, baking powder, baking soda, cinnamon, and salt.  Gradually add dry ingredients to the sugar and oil mixture.  Beat the eggs together in a separate bowl and then gradually add to batter.  Then mix in carrots, pecans and vanilla until well combined.   Pour batter into prepared pan.  Bake for 60 minutes, or until toothpick inserted in the center comes out clean. (This is another bread that I find that I have to bake a little longer, about another extra ten minutes.) (If you do a lot of baking it's a good idea to get an oven thermometer because your oven could be off.) (If the temperature is too high your bread will start to burn on the outside while the inside isn't cooked.)  Cool in pan for 10 minutes and turn onto wire rack to cool completely.
(Again if you are using another measurement for your loaf pan you will have to keep an eye on it.  The time may vary. Just check it with a toothpick in the center of the bread, if it comes out clean your bread is done.)
