WALNUT QUICK BREAD

(Delicious nut bread that makes two loaves.)
INGREDIENTS:
  • 3 cups flour
  • 1 cup sugar
  • 1 cup walnuts, roughly chopped
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 egg, lightly beaten
  • 1 2/3 cups milk
  • 1/2 teaspoon vanilla
  • 1/4 cup oil
DIRECTIONS:
Preheat oven to 350 degrees.  Grease two -- 8 and 1/2" by 4 and 1/2" loaf pan.  In a mixing bowl combine flour, sugar, chopped walnuts, baking powder, salt, baking soda and cinnamon.  In another bowl combine egg, milk, vanilla and oil.  Add wet mixture to dry ingredients and stir just until moistened. Pour batter into two prepared pans and bake for 40 to 60 minutes. (You may have to bake longer to have the toothpick come out clean when you insert it in the center of the bread.)  Cool for 10 minutes in pan and then cool completely on a rack.  
(Again you might have to adjust your baking time if you are using a pan that is another size.)
