BUTTERMILK APPLE MUFFINS

These muffins stay moist for a few days. They are really delicious.

(About 12 muffins)

Ingredients:
  • 3/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 egg, slightly beaten
  • 1 teaspoon vanilla
  • 1-1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup apple, peeled and chopped
  • 1/2 cup buttermilk
Topping:
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans, optional
  • 1/2 teaspoon cinnamon
Directions:
Preheat oven to 325 degrees.  Combine 3/4 cup of brown sugar, oil, egg and vanilla in a large bowl.  In another bowl combine flour, baking soda and salt.   Add dry ingredients to wet ingredients.  Then add the apples and buttermilk.   Mix thoroughly.  If you are not using liners in your muffin cups, grease them.   Fill muffin cups 2/3  full.  Combine 1/4 cup of brown sugar, pecans and cinnamon in a small bowl.  This is for the topping.  Sprinkle this evenly over the batter.  Bake at 350 degrees for 15 to 20 minutes.
