They are excellent muffins which come out very moist. |

Preheat oven to 350 degrees. Beat oil, eggs and sugar until blended. Stir in finely grated carrots. In a large bowl combine flour, baking powder, baking soda, cinnamon, nutmeg and ginger. Pour wet ingredients into dry ingredients. Stir only to moisten the batter. If you don't line your muffin tins, grease them. Fill about 2/3 full. Bake 15 to 20 minutes. |
