CINNAMON APPLE MUFFINS |

are so delicious!) |
(Makes about a 1 dozen muffins) |

INGREDIENTS: |
- 2 cups sifted flour
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 cup sugar
- 1 cup milk
- 1 egg
- 1/4 cup shortening, melted
- 1 cup sliced apples (The apples and this
- 1/4 cup sugar -- get mixed in at the last minute)

DIRECTIONS: |
- Preheat oven to 350 degrees. Grease medium sized muffin
tins or you could line them with bake cup's paper, (you know the ones you use when you
make cupcakes). Sift together the sifted flour, baking powder, salt, cinnamon and 1/4 cup
sugar. Combine the milk and egg and beat well. Now add the milk and egg mixture to the
flour mixture and stir to blend. Blend in melted shortening to batter. Beat just enough to
make sure everything is mixed well. Combine apple slices and 1/4 cup sugar in a separate
bowl. Now fold the apple mixture into batter. Pour into muffin tins, filling each cup 2/3
full. Bake for 30 to 35 minutes or until cake tester or toothpick inserted in the center
of muffin comes out clean. Cool in pans for about 5 minutes. Remove and cool completely or
serve warm.
