BANANA BLUEBERRY
MUFFINS |

blueberry muffins with a hint of banana!) |
(Makes about 1 dozen muffins) |

INGREDIENTS: |
- 2/3 cup milk
- 1/4 cup vegetable oil
- 1/2 cup mashed very ripe banana (1 medium)
- 1 egg
- 2 cups flour
- 2/3 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg (optional)
- 1 cup fresh or frozen (thawed, well drained) blueberries

DIRECTIONS: |
- Preheat oven to 400 degrees. Grease regular size muffin tins
or line with paper baking cups (you know the ones you use when you make cupcakes). Beat
milk, oil, banana and egg in a large bowl with a fork. In another bowl mix your dry
ingredients. Take the wet mixture and stir into the dry ingredients. Fold in the
blueberries at the end. Divide batter evenly among muffin cups (cups will be about 2/3
full). Sprinke with sugar if desired. Bake 18 to 20 minutes or until golden brown.
Immediately remove from pan.
