strawberry pasta

serves four

1 cup thinly sliced strawberries
1/3 cup dark brown sugar
3/4 cup heavy cream
4 oz angel hair pasta
2 tbs chopped, toasted hazelnuts

  1. In small bowl, toss strawberries and 1 tbs brown sugar. Cover and set aside.
  2. In medium saucepan:
    1. Combine cream and remaining brown sugar.
    2. Bring to boil, stirring constantly.
    3. Reduce heat and simmer until sugar is dissolved, and until cream is light brown in color and smooth in consistency.
    4. Remove sauce from heat.
  3. Cook pasta according to directions on the package, but do not use salt.
  4. When cooked, drain pasta well.
  5. Return saucepan to heat, add pasta, and toss until the pasta is thoroughly coated and heated.
  6. Place pasta in a serving bowl or in individual dishes.
  7. Spoon strawberries over pasta and sprinkle with chopped nuts.
  8. Serve immediately.
