Ingredients:
- 4 medium slices of white bread
- 1/2 cup cooked chicken
- 2 tsp mango chutney
- 2 tsp mayonnaise
- 3 tsp chopped green pepper
- 2 spring onion, finely chopped
- 2 cocktail gherkins, finely chopped
- 1/4 cup butter, soften
- 21 stuffed green olives
- salt and black pepper
- coriander springs to garnish

Preparation:
- In a bowl, mix chicken, chutney, mayonnaise, green pepper, onion and gherkins.
- Season with salt and pepper.
- Using a rolling pin firmly flatten and cut the crust.
- Spread butter and chicken mixture on the bread, roll up each slice bread like a swiss roll and wrap each roll in plastic wrap and chill for 2 hours.
- Cut each roll at an diagonal angle into three slices.
- Arrange slices on serving platter, garnished with springs of coriander.
