Ingredients:



  • 4 medium slices of white bread
  • 1/2 cup cooked chicken
  • 2 tsp mango chutney
  • 2 tsp mayonnaise
  • 3 tsp chopped green pepper
  • 2 spring onion, finely chopped
  • 2 cocktail gherkins, finely chopped
  • 1/4 cup butter, soften
  • 21 stuffed green olives
  • salt and black pepper
  • coriander springs to garnish


Preparation:


  • In a bowl, mix chicken, chutney, mayonnaise, green pepper, onion and gherkins.
  • Season with salt and pepper.
  • Using a rolling pin firmly flatten and cut the crust.
  • Spread butter and chicken mixture on the bread, roll up each slice bread like a swiss roll and wrap each roll in plastic wrap and chill for 2 hours.
  • Cut each roll at an diagonal angle into three slices.
  • Arrange slices on serving platter, garnished with springs of coriander.
