West African Peanut Soup

4 C. Chicken broth (vegetable) 1 Can (141/2 OZ.) stewed tomatoes 1 C. chopped carrots 1 C. chopped scallions 3/4 C. reduced fat peanut butter, creamy or chunky 1 C. milk 1/4 C. instant mashed potato flakes
Simmer carrots and scallions in broth until mixture boils, approximately 5 minutes.
Add stewed tomatoes, and peanut butter.
Stir in milk and potato flakes.
Cook until well combined, approximately 4 minutes.
