West African Peanut Soup

  • 4 C. Chicken broth (vegetable)
  • 1 Can (141/2 OZ.) stewed tomatoes
  • 1 C. chopped carrots
  • 1 C. chopped scallions
  • 3/4 C. reduced fat peanut butter, creamy or chunky
  • 1 C. milk
  • 1/4 C. instant mashed potato flakes


  • Simmer carrots and scallions in broth until mixture boils, approximately 5 minutes.

    Add stewed tomatoes, and peanut butter.

    Stir in milk and potato flakes.

    Cook until well combined, approximately 4 minutes.
