French Onion Soup

- 1/4 cup butter
- 2 large onions (yellow)
Saute onions in butter until very soft, but not brown.
Add 4 cups water and 2 cans undiluted Beef broth
Add Salt, Pepper, and Parsley
Simmer for 45 minutes.
Pour into deep bowls. Add a slice of toasted french bread, top with Swiss cheese.
Toast under the broiler until the cheese is melted and toasted.
This sounds so simple, but my DH said, " are you sure you only add beef broth"
