BLUEBERRY CAKE
[new dessert to try!]


1/2 cup shortening
1 cup sugar
2 eggs
2 cups flour
2 teaspoons baking powder
1 cup berries
3/4 cup milk
1 teaspoon vanilla
1/2 teaspoon salt
Cream sugar and shortening. Add eggs. Alternate flour and milk, etc... Sprinkle top with granulated sugar before baking. Bake at 350 degrees for 30 minutes. By using an oblong pyrex pan for this you will have a smaller cake than with a mix.    Lady Ann

SUZY'S PEANUT BUTTER CANDY

1 box 10x confectioner's sugar
1-1/2 cups graham cracker crumbs
1-1/2 cups peanut butter
2 sticks oleo, melted     measurspoons.gif (775 bytes)

1 bag chocolate chips, melted

Mix sugar, crumbs, peanut butter and oleo;
spread mixture in 9" x 13" greased pan;
spread melted chocolate chips over peanut
butter mixture. Chill unti firm. Let set
at room temperature before cutting into
squares.

4 cups sliced apples
1/4 cup water
1 tsp. cinnamon
1 tsp.salt
3/4 cup sifted flour
1/3 cup butter

Crumble together 3/4 cup sifted flour,
1 cup sugar and 1/3 cup butter. Drop
mixture over apples and bake at 350
degrees for 40 minutes. Serves 6

pie crust
1 tsp. flour
2 eggs, slightly beaten
1 (16 oz) can solid pack pumpkin
3/4 cup sugar
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1 (12 oz) can evaporated milk

Heat oven to 425 degrees. Prepare pie crust.
Flute edge to stand 1/2 inch above rim. Mix
ingredients in order given. Pour into pie
crust-lined pan. Bake at 425 degrees
for 15 minutes. Reduce heat to 350
degrees; continue baking 35
to 45 minutes or until knife inserted
near center of pie comes out clean.
If necessary, cover with foil to prevent
excessive browning.


TOFFEE BARS   PetitFours.gif (1987 bytes)

1/2 cup brown sugar
1/2 cup granulated sugar
1 cup shortening (oleo)
2 eggs
2 tsp. vanilla
1 cup flour
1 cup oatmeal

Mix all ingredients; spread into 9" x 13" pan.
Bake at 350 degrees Fahrenheit until firm and
lightly browned. Cool.

Spread with chocolate icing and top with coconut;
cut into bars.

 

ORANGE BALLS  measurspoons.gif (775 bytes)

Melt:    1 stick oleo
Add:    1 12oz. package vanilla wafers (3 cups)
           1 lb. 10x confectioner's sugar
           1 cup finely chopped pecans
Add:    1 6oz. can thaawed frozen orange juice

Roll into small balls; roll in coconut flakes;
Refrigerate. (can be frozen)

1 cup cooking oil
3 eggs
3 cups flour
1 tsp. cinnamon
3 cups diced apples
2 cups sugar
1 tsp. vanilla
1 tsp. soda
1 tsp. salt
1 cup walnuts

Beat oil & sugar, add eggs & vanilla.
Beat well and add dry ingredients.
Then add nuts and apples. Spread into
large well greased pan and bake at
300 degrees for 50 to 60 minutes.
Cool and sift powdered sugar over top of cake.
