PARTY TACO SALAD
2 lbs ground beef
2 packages taco seasoning mix
16 ounces cheddar cheese, shredded
1 red onion, chopped
1 yellow onion, chopped
2 heads iceberg lettuce, chopped
4 tomatoes, chopped
2 avocados, chopped
2 green peppers, chopped
1 can black olives, chopped
1 large bag of Doritos nacho chips, crumbled
1 8-ounce bottle Catalina salad dressing
Brown ground beef with chopped yellow onion. Add 1 package of taco seasoning
and water according to package directions. Set aside to cool completely. In
a large bowl mix together chopped lettuce, tomato, cheese, avocado, red
onion, peppers, olives, and 2nd package of taco seasoning. Add cooled beef
mixture. Just before serving toss with the dressing and the last step is to
mix in 3/4 of the package of crushed Doritos, leaving the rest on the side
for people who want extra. (they get soggy if you do them too early.)

OAKHILL POTATOES
1 1/2 pounds (4 to 5 medium) potatoes,
peeled & diced
1/2 teaspoon salt
3 tablespoons butter or margarine
2 tablespoons flour
salt and pepper
2 cups milk
2 hard-boiled eggs, peeled & sliced
2 tablespoons chopped onion
3 tablespoons dried bread crumbs
Place potatoes in large saucepan. Cover with cold water.
Add 1/2 teaspoon salt and bring to a boil. Reduce heat to
low and cook 20 to 25 minutes or until potatoes are tender.
drain; reserve. Melt 2 tablespoons butter in medium
saucepan. Add flour, salt, and pepper; cook until bubbly.
Add milk; stir well. Cook, stirring constantly, until
thickened. Combine potatoes, hard-boiled eggs, onion,
salt, and pepper in lightly greased 1 1/2 quart casserole.
Add white sauce; blend lightly with spatula. Melt remaining
1 tablespoon butter. Add bread crumbs; mix well. Sprinkle
buttered crumbs over casserole. Bake at 350 degrees for
30 minutes. Serve hot

SWEET POTATO CASSEROLE
3 cups cooked mashed sweet potatoes
1/2 cup white sugar
2 eggs, beaten
1/2 teaspoon salt
1/2 stick margarine, melted
1/2 cup raisins (optional)
1/2 cup milk
1-1/2 teaspoon vanilla
1/2 cup light brown sugar
1/2 cup flour
1 cup chopped nuts
1/3 stick margarine
Mix first eight ingredients together and place
in 9x9 glass pan. Mix remaining ingredients
and spread on top of potato mixture.
Bake at 350 degrees for 15 minutes,
or until heated through.
YIELD: 6 Servings - recipe may be doubled

BROCCOLI SALAD
2 bunches broccoli florets
1/2 cup nuts, chopped
1/2 cup raisins
1 small chopped onion
10 strips cooked bacon, crumbled
Mix above ingredients together in serving bowl
In another bowl, mix:
1 cup mayonnaise (or Miracle Whip)
1/2 cup sugar
3 T. vinegar
Pour over broccoli mixture
Refrigerate overnight
