Cheese Cake

Crust:

Melt 2 tablespoons margarine in 10” springform pan. Add ¾ cup finely crushed graham crackers and ¾ cup finely ground walnuts. Toss to coat ingredients with margarine and press compactly onto bottom of pan.

Filling:

Cream 4 – 8 ox packages cream cheese, 4 eggs, 1 ½ cups sugar, 1 tablespoon lemon juice and 2 teaspoons vanilla, until smooth. Spoon over crust.

Bake 45 to 50 minutes at 350°.

Topping:

While the filling is baking mix 3 cups sour cream, ½ cup sugar and 1 teaspoon salt.

Remove cake from oven and let stand 15 minutes – keep the oven at 350°. Spoon topping carefully onto cake and return to oven for 5 minutes. Cool on rack. 1
