TUNA SALAD

TUNA SALAD:
2 cans (7-ounces each) tuna
1 can (8-ounces) pitted olives
Lettuce
CRISPY CHEESE COOKIES:
1 pound sharp Cheddar cheese
1 box rice cereal (such as Rice Krispies)
FRESH FRUIT KABOBS:
1 small can cranberry sauce
1 small jar orange marmalade
1 small can orange juice
1 small jar Dijon-style mustard
1 apple
1 pear
4 kiwi fruit
2 oranges
BEVERAGES (if needed)
RECIPES
TUNA SALAD
2 (7-ounces each) cans tuna, drained and flaked
1 cup pitted olives
1/2 cup celery, chopped
1 cup mayonnaise or salad dressing
2 teaspoons lemon juice
1/2 teaspoon prepared mustard
1/2 teaspoon onion powder
1/2 teaspoon ground ginger
Lettuce leaves
Set aside 10 to 12 olives, chop the remaining olives.
Combine tuna, olives and celery.
Combine mayonnaise or salad dressing, lemon juice, mustard,
onion powder and ginger. Mix well and pour over tuna. Stir
gently and chill until serving time, at least an hour.
Serve on lettuce leaves and top with olives.
Makes 4 to 6 meal servings. (Recipe may be halved for 2 to
3 servings.)
CRISPY CHEESE COOKIES
1 pound sharp Cheddar cheese, grated at room temperature
2 cups all-purpose flour
2 sticks (1/2 pound) margarine, melted
1 teaspoon red pepper
2 cups rice cereal (Rice Krispies for example)
1/4 teaspoon salt
Preheat oven to 300 degrees.
Sprinkle flour on cheese and melted margarine. Add pepper
and salt to taste. Add cereal and knead together until well
blended. Shape into marble size balls. Place on cookie
sheet which has been sprayed with cooking spray. Flatten
with fork.
Bake 30 minutes.
Makes about 4 dozen cookies.
FRESH FRUIT KABOBS
1/2 cup cranberry sauce
1/4 cup orange marmalade
3 tablespoons orange juice
1 teaspoon Dijon-style mustard
1 apple, cored and cut into 16 wedges
1 pear, cored and cut into 16 wedges
4 kiwi fruit, peeled and cut into 16 wedges
2 oranges, peeled and cut into 16 wedges
1 tablespoon lemon juice
Stir cranberry sauce in a small bowl with a fork until sauce
is broken. Add marmalade, orange juice and mustard - mix
well. Chill until serving time.
Toss apple and pear with lemon juice. Thread one piece each
apple, pear, kiwi fruit and orange on skewers, repeat.
Serve with sauce.
Makes 4 to 8 servings.
SUGGESTED ORDER OR PREPARATION:
1.
Prepare the Tuna Salad several hours before meal time.

Prepare sauce for Fruit Kabobs.
3.
The crackers take about 10 minutes to stir up and 30 minutes
to bake. You will make about 4 dozen crackers. The length
of time to complete baking will depend on how many crackers
you bake at one time. I usually have 12 crackers on each
sheet and bake two sheets at a time - thus it takes me an
hour of baking time. These are good both warm and cold.

Prepare fruit for Kabobs.
This is a great, easy, nutritious meal!
