HAM AND PIMIENTO SANDWICHES:
Sandwich bread
Ham (recipe calls for 1-1/2 cups - I usually use leftover
ham instead of buying ham just for this recipe)
1 jar (4-ounces) pimientos
Cheddar cheese (recipe requires 4-ounces)
FRENCH FRIED PICKLES:
1 quart dill pickles
1 can beer
OATMEAL COOKIES:
4-ounces raisins
4-ounces pecans
RECIPES
HAM AND PIMIENTO SPREAD FOR SANDWICHES
1 1/2 cups ham, chopped
1 (4-ounces) jar pimientos, drained
1/2 cup mayonnaise or salad dressing
1 teaspoon prepared mustard
1/4 teaspoon pepper
1 cup (4-ounces) Cheddar cheese, grated
Mix all ingredients well. Chill 1 to 2 hours.
Makes 6 sandwiches.
FRENCH FRIED PICKLES
3/4 cup flour
1 tablespoon red pepper
2 teaspoons paprika
1 teaspoon pepper
2 teaspoons garlic salt
1 teaspoon salt
4 drops hot sauce
1 cup beer
1 quart pickles, thinly sliced
1 cup flour
Vegetable oil for deep frying
Heat oil to 375 degrees.
Combine 3/4 cup flour and dry ingredients. Add hot sauce
and beer - mix well.
Dredge pickles in flour and then dip in batter. Deep fry
until pickles float to the surface and are golden brown.
Drain on paper towels. Serve at once.
Makes 4 servings or 2-1/2 dozen appetizer servings.
OATMEAL COOKIES
1 cup flour
1 teaspoon nutmeg
1-1/4 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon soda
1/2 cup butter flavored shortening
1/2 cup brown sugar, firmly packed
1/4 cup sugar
1 egg
2 tablespoons water
2 cups oatmeal, uncooked
1/2 cup raisins, (soak in warm water for 20 minutes before
using)
1/2 cup pecans, chopped
Preheat oven to 375 degrees.
Combine flour, nutmeg, cinnamon, salt and soda in a medium
bowl. In a large bowl, cream shortening. Add sugar and
beat well. Beat in egg and water. Add flour mixture - mix
well. Stir in oatmeal, raisins and pecans.
Drop by rounded teaspoonfuls on ungreased cookie sheet.
Bake 10 minutes or until brown.
Makes 6 dozen cookies.
SUGGESTED ORDER OF PREPARATION:
1.
Bake cookies. It should take you about 1 hour - maybe a
little longer. Cookies take 10 minutes to bake and recipe
makes 6 dozen. These keep well.
2.
Prepare spread. Needs to chill 1 to 2 hours before serving.
You may make this first and then bake cookies - whatever you
prefer.
3.
Prepare pickles last. They must be served immediately.
They will take you approximately 30 minutes to prepare and
fry.
