1 chicken (about 3 pounds)

1 potato

1 onion

2 carrots

1 bunch celery (recipe requires 1 stalk)

1 can tomatoes (28-ounces)

1 can cream style corn (17-ounces)

SOUTHERN CORNBREAD:

1 package white cornmeal

CHOCOLATE APPLESAUCE CAKE:

1 can applesauce

1 small package semi-sweet chocolate pieces

4 ounces pecans or walnuts

CHICKEN SOUP

1 chicken (about 3 pounds)

1 tablespoon salt

1/2 cup (1 stick) margarine

1 quart boiling water (approximately)

1 large potato, cubed

1 onion, chopped

2 carrots, thinly sliced

1 stalk celery, chopped

1 can tomatoes (28-ounces), undrained

2 cans cream-style corn (17-ounces each)

1/2 teaspoon pepper

In a large Dutch oven, combine chicken, salt, margarine and

boiling water. Bring to a boil - reduce heat - cook until

chicken is tender. Remove chicken from broth - let cool -

then remove meat from bones and discard skin.

To broth add potato, onion, carrots and celery. Bring to

boil - reduce heat - cook until vegetables are tender. Add

chicken and remaining ingredients. Simmer 40 minutes. Stir

occasionally.

Makes 8 servings.

 

 

 

 

 

 

 

 

SOUTHERN CORN BREAD

1 cup white corn meal

2 tablespoons shortening, melted

1 teaspoon salt

1 cup boiling water

1 cup milk

1 egg

2 teaspoons baking powder

1 cup corn meal

Preheat oven to 450 degrees. Well-grease muffin pans, corn

stick pans, or 9 or 10 inch pan or skillet.

Combine white corn meal, shortening and salt. Pour hot

water over mixture. Let stand 5 minutes.

Stir in milk and egg.

Combine baking powder and corn meal. Add to mixture.

Bake 25 to 30 minutes.

Makes approximately 12 muffins, corn sticks or pieces.

CHOCOLATE APPLESAUCE CAKE

2 cups sifted flour

3 tablespoons cocoa

1 1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup shortening or margarine

1 1/2 cups sugar

3 eggs, well beaten

2 teaspoons vanilla

2 cups applesauce

1 cup semi-sweet chocolate chips

1/2 to 1 cup chopped walnuts or pecans

1 tablespoon sugar

Sift together flour, cocoa, soda and salt. Cream together

sugar and shortening until light and fluffy (use an electric

mixer). Add eggs, one at a time, beating well after each

addition. Blend in vanilla. Add flour mixture alternately

with applesauce, beat well after each addition.

Pour batter into greased 9 x 13 x 2-inch baking pan.

Sprinkle with chocolate chips, nuts and sugar.

Bake at 350 degrees for 35 to 40 minutes. Let cool in pan

on rack.

Makes 12 servings.

 

 

 

 

SUGGESTED ORDER OF PREPARATION:

1.

The chicken may be cooked earlier in the day or the day

before. It needs to cook 1-1/2 hours; then cool before

deboning.

2.

The cake may be baked the day before or ealier in the day.

It takes 10 minutes to prepare batter, 40 minutes to bake,

and needs to cool at least an hour before serving.

3.

Put together soup ingredients. Needs to cook 40 minutes.

4.

Prepare cornbread. Needs to bake 35 to 40 minutes.

This is a great family meal for the a cold fall or winter

day. It is easy to prepare in stages - great for busy

schedules!_
