ITALIAN QUICHE:

1 pound fresh mushrooms

1 pound Italian sausage

8-ounces Swiss cheese

1 small carton whipping cream

FRESH GREEN SALAD:

1 head lettuce

1 cucumber

1 carrot

1 package commercial croutons

1 bottle dressing (your preference)

BANANA SPLIT CAKE:

Margarine (recipe requires 3 sticks or 1-1/2 cups)

1 box graham cracker crumbs

6 bananas

1 can (10-ounces) crushed pineapple

1 small carton whipping cream

1 cup pecans

1 small jar maraschino cherries

ITALIAN QUICHE

Pastry for 10-inch pie shell

1 pound fresh mushrooms, sliced

1 pound Italian sausage, thinly sliced

2 cups (8-ounces) Swiss cheese, grated

1 cup whipping cream

4 eggs, beaten

1/4 teaspoon salt

Preheat oven to 425 degrees. Line a 10-inch quiche dish or

pie plate with pastry, trim excess around the edges. Prick

the bottom and sides of shell with fork. Bake 6 minutes.

Let cool on wire rack. Reduce oven temperature to 350

degrees.

Cook sausage until brown. Drain; reserve 2 tablespoons

drippings. Saute mushrooms in the 2 tablespoons drippings

until tender, about 5 minutes. Drain off dripping.

In a medium bowl, combine sausage, mushrooms, cheese, cream,

eggs and salt. Mix well. Pour into pastry shell. Bake for

45 minutes or until set.

Makes 1 (10-inch) quiche.

 

10-INCH PASTRY SHELL

2/3 cup shortening

2 cups sifted flour

1 teaspoon salt

1/4 cup water

Sift the flour into a bowl. Take out 1/3 cup. Add salt and

mix well. Cut shortening with fork, knives or pastry

blender into the flour until the pieces are the size of

peas.

Mix water with reserved 1/3 cup flour to form paste. Add to

flour - shortening mixture. Mix and shape into a ball.

Place dough on a flour dusted surface and roll with short,

light stroke, roll from the center to the edges, keep it in

a circular shape. It should be about 12 to 13 inches in

diameter.

Place the pastry in greased or sprayed with cooking spray

pie plate or quiche dish. Trim the edges 1/2 inch beyond

edge of plate.

FRESH GREEN SALAD

1 head lettuce, torn into bite size pieces

1 cucumber, thinly sliced

1 carrot, grated or shredded

1 cup commercial croutons

1 bottle dressing (your preference)

Place all ingredients except croutons and dressing in salad

bowl. At serving time, toss with dressing and top with

croutons.

BANANA SPLIT CAKE

1 1/2 cups (3 sticks) margarine, 1 cup softened (at room

temperature about 30 minutes)

1 cup graham cracker crumbs

2 eggs

2 cups powdered sugar

6 bananas

1 (10-ounces) can crushed pineapple, drained

1 cup whipping cream, whipped and sweetened to taste

1 cup pecans, chopped

1 small bottle maraschino cherries, cut fine

THIS CAKE REQUIRES NO BAKING.

Melt 1/2 cup margarine and mix with crumbs. Press into a 13

x 9 inch pan. Beat eggs, remaining margarine and sugar for

15 minutes. Place on top of crumbs. Add bananas, peeled

and halved lengthwise, split side down. Completely cover

sugar and egg mixture. Spread drained pineapple over

bananas. Spread whipping cream on top. Sprinkle with

pecans; then cherries.

Chill.

Makes 12 large or 16 small servings.

 

SUGGESTED ORDER OF PREPARATION:

1.

Prepare the cake at least 3 hours in advance. It could be

made the day before.

2.

About an hour and 15 minutes before mealtime, prepare the

pie shell. 3.

While the shell cools, prepare quiche filling. Quiche will

take 45 minutes to bake.

4.

While quiche is baking, prepare salad. Toss at mealtime.
