8-ounces Italian Sausage

8-ounces ground beef

1 can (16-ounces) whole tomatoes

1 can (15-ounces) tomato sauce

1 can (6-ounces) tomato paste

3 green peppers

1 onion

1 can (4-1/2 ounces) whole mushrooms

8-ounces mozzarella cheese

1 package (7-ounces) thin spaghetti

FRESH SPINACH SALAD:

1 head lettuce

1 package spinach

1 can (4-ounces) sliced ripe olives

8 large fresh mushrooms

1 carrot

SESAME-PARMESAN STICKS:

Sesame seeds

1 small loaf whole bread

PERFECT CHEESECAKE:

3 packages (8-ounces each) cream cheese

Fruit topping, if desired, such as canned cherries, etc.

ITALIAN SPAGHETTI

1/2 pound Italian sausage

1/2 pound ground beef

1 can (16-ounces) whole tomatoes, drained

1 can (15-ounces) can tomato sauce

1 can (6-ounces) tomato paste

3 green peppers, chopped

1 onion, chopped

1 can (4-1/2 ounces) whole mushrooms drained

1/4 teaspoon tumeric

1/2 teaspoon chili powder

1 teaspoon ground oregano

1 teaspoon dried basil

1 teaspoon cumin seeds

1 teaspoon dried whole thyme

1-1/2 teaspoons parsley

1 cup (8-ounces) mozzarella cheese, grated

3 tablespoon garlic powder

1 package (7-ounces) thin spaghetti

Grated Parmesan cheese

Brown sausage and beef, stir to crumble, drain off

drippings. Stir in tomatoes, sauce, paste, green peppers,

onion, mushrooms, tumeric, chili powder, oregano, basil,

cumin, thyme, parsley and 1 tablespoon garlic powder. Stir

well.

Cover and simmer 20 minutes. Add 1 tablespoon garlic

powder, cover, and simmer an additional 15 minutes. Add

remaining garlic powder and mozzarella. Stir well. Cover

sauce and simmer an additional 15 minutes.

Prepare spaghetti according to package directions. Serve

sauce over spaghetti and sprinkle with Parmesan cheese.

Makes 6 servings.

FRESH SPINACH SALAD

1/4 cup wine vinegar

1/2 cup olive oil

2 teaspoons lemon juice

1/8 teaspoon hot sauce

1 clove garlic, minced

1/4 teaspoon salt

1 tablespoon green onion tops or chives, chopped

3 cups lettuce, torn

3 cups spinach, torn

1/2 cup ripe olives, sliced

8 large fresh mushrooms, sliced

1 carrot, grated

Combine vinegar, oil, lemon juice, hot sauce, garlic, salt

and chives in a jar. Cover tightly and shake well. Chill

at least 2 hours.

In a large salad bowl, combine lettuce, spinach, olives,

mushrooms and carrots. Add dressing and toss lightly.

Makes 8 servings.

SESAME-PARMESAN STICKS

3 tablespoons sesame seeds

1/3 cup grated Parmesan cheese

1/4 butter or margarine, melted

12 slices bread, crusts removed

Preheat oven to 350 degrees.

Cut each slice of bread into 4 strips. Place on ungreased

cookie sheet. Brush bread with melted butter (or

margarine). Then sprinkle evenly with seeds and cheese.

Bake for 10 minutes or until golden brown.

Makes 4 dozen.

 

 

PERFECT CHEESECAKE

FILLING:

3 8-ounce packages cream cheese, softened

1 1/2 cups sugar

2 teaspoons vanilla

3 eggs, well beaten

1 1/2 teaspoons lemon juice

PASTRY:

1/3 cup butter or margarine

3/4 cup all-purpose flour

2 teaspoons sugar

1 teaspoon salt

Preheat oven to 475.

Prepare springform pan for baking by properly assembling and

liberally applying margarine or butter.

To make pastry, melt butter. Add flour, sugar, and salt.

Mix together to form soft "paste". Mold around bottom and

sides of springform pan.

Bake for 5 to 10 minutes in 475 degree oven. Remove pan

from oven and lower oven temperature to 300 degrees.

Make filling by beating cream cheese in electric mixer until

well blended. Add eggs, vanilla, and lemon juice. Beat

until smooth.

Pour into crust and bake for 1 hour. Cool on wire rack.

SUGGESTED ORDER OF PREPARATION:

1.

Prepare cheesecake earlier in the day or the day before. It

takes about 10 minutes to mix, an hour to bake and at least

an hour to cool.

2.

About 2 hours before mealtime, prepare the dressing for the

salad. It takes 2 hours to chill.

3.

The spaghetti sauce takes about an hour so start it about an

hour before mealtime.

15 minutes before mealtime, prepare bread sticks.

5.

While bread sticks are baking, complete salad.

This has been a family favorite for years. It is lots of

fun to make and eat.
