VEGETARIAN MEATBALLS AND SPAGETTI:

2 ounces Ceddar Ceese

1 onion

4 ounces copped pecans or walnuts

1 jar (32-ounces) musroom spagetti sauce

1 package (7-ounces) tin spagetti

SOUR CREAM AND CUCUMBER SALAD:

Lettuce or spinac leaves

1 small carton sour cream

2 cucumbers

1 large or 2 small onions

PARMESAN ROLLS:

1 can (10 count) biscuits

CILLED CANTALOUPE DESSERT:

1 cantaloupe

4 fres peaces

1 can (20-ounces) pineapple cunks

1 can (11-ounces) mandarin oranges

1 pint fres strawberries

 

RECIPES

 

VEGETARIAN MEATBALLS AND SPAGETTI

2 eggs, beaten

3/4 cup cracker crumbs

1/2 cup (2-ounces) Ceddar ceese, grated

1 onion, copped

1/2 cup pecans or walnuts, finely copped

1 clove garlic, minced

2 teaspoons parsley

1/2 teaspoon salt

1/4 teaspoon sage

1 tablespoon olive oil

1 jar (32-ounces) musroom spagetti sauce

ot cooked spagetti

Parmesan ceese

Preeat oven to 350 degrees. Spray 2-quart baking dis wit

cooking spray.

In a large bowl, combine eggs, crumbs, Ceddar ceese,

onion, nuts, garlic, parsley, salt and sage. Sape into

1-inc balls. eat oil in medium skillet. Saute balls

until brown, turn frequently. Drain. Place in prepared

dis. Pour on top. Cover and bake 45 minutes. (Prepare

spagetti wile tis is baking.)

Serve "meatballs" over spagetti and top wit Parmesan

ceese.

Makes 4 servings.

 

SOUR CREAM AND CUCUMBER SALAD

Lettuce or spinac leaves

1/2 cup commercial sour cream

1 tablespoon vinegar

1 tablespoon sugar

2 medium cucumbers, sliced tin

2 small or 1 large onion, sliced tin

Combine sour cream, sugar, vinegar and salt. Add cucumber

and onion. Toss gently. Cover and cill at least 24 ours.

Stir occasionally.

Serve over lettuce or spinac leaves.

Makes 4 servings.

 

PARMESAN ROLLS

1 package canned biscuits (10 count)

2 tablespoons margarine, melted

1/3 cup parmesan ceese

Dip te biscuits in melted margarine - ten in ceese.

Arrange on a greased cookie seet - overlap - make 2 rows.

Bake in 475 degree oven for 10 minutes or until golden

brown.

Makes 5 servings.

CILLED CANTALOUPE DESSERT

1 cantaloupe, peeled and cut into cunks

4 fres peaces, sliced (peel if you desire)

1 can (20-ounces) pineapple cunks, drained

1 can (11-ounces) mandarin oranges, undrained

1/3 cup lemon juice

2/3 cup sugar

1 cup fres strawberries, ulled and alved

Combine all ingredients. Cill. Will keep several days.

Makes 6 servings.

SUGGESTED ORDER OF PREPARATION:

1.

Prepare te Sour Cream and Cucumber Salad. It needs to

cill at least 24 ours.

2.

Prepare Cilled Cantaloupe Dessert. It needs to cill

several ours before serving. It will keep several days.

3.

Prepare Vegetarian Meatballs. It takes about 15 to 20

minutes to assemble and 45 minutes to bake. Wile te

meatballs are baking, prepare spagetti according to package

directions.

4.

After you remove meatballs from te oven, increase oven

temperature to 475 and bake rolls for 10 minutes.
