2 packages (8 ounces each) cream cheese

1-1/2 cups pecans or almond slivers

Amaretto

1 cup dried apricots

OVEN BAKED CHICKEN KIEV

3 whole chicken breasts

Small can evaporated milk

1 lemon

BAKED GREEN CASSEROLE

1 package (10-ounces) frozen peas

1 package (10-ounces) frozen lima beans

1 package (10-ounces) green beans

1 small jar chopped pimientos

BUTTERCREAM FROSTING:

1 pound box powdered sugar

AMARETTO CHEESE BALL

2 (8-ounces each) creamed cheese, softened (at room

temperature for approximately 30 minutes or put in

microwave on low or defrost setting 30 seconds to 1

minute depending on microwave

1 1/2 cups pecans, chopped or almond slivers

1/2 cup Amaretto

1 cup dried apricots, chopped

Mix cream cheese, 1/2 cup apricots, 1/2 cup nuts and

amaretto. Divide and roll into 2 balls. Mix remaining

nuts and apricots in bowl. Roll each ball in fruit/nut

mixture. Wrap in plastic warp and refrigerate.

Remove from refrigerator about 15 minutes before serving.

This is very Amaretto flavored - not cheesy tasting.

Serve with apple slices, crackers, etc.

Makes 2 cheese balls.

 

 

 

 

OVEN BAKED CHICKEN KIEV

3 tablespoons butter or margarine, softened

1/2 teaspoon garlic salt

1 teaspoon parsley flakes

3 whole chicken breasts, split, boned and skinned

3 tablespoons olive oil

1/4 teaspoon season salt

1 cup cracker crumbs

1/3 cup evaporated milk

Toothpicks

Lemon wedges

 

Mix well butter or margarine, garlic salt and parsley.

Shape into a stick (like a stick of margarine). Cover and

freeze one hour.

Place chicken on a sheet of waxed paper. Flatten with a

meat mallot of rolling pin to 1/4-inch thickness.

Place 1/6 of butter mixture in the center of each breast

half. Fold long sides of chicken over butter. Fold ends

over and secure with toothpicks.

Preheat oven to 425 degrees. Spread oil in 13 x 9 x 2-inch

baking pan.

Combine crumbs and season salt on a sheet of waxed paper.

Dip chicken into milk and then coat with crumb mixture.

Place chicken with seam side up in prepared pan. Bake 15

minutes. Turn each piece over and bake an additional 10

minutes.

Serve with lemon wedges.

Makes 6 servings.

GREEN PARTY CASSEROLE

1 package frozen peas, cooked

1 package frozen lima beans, cooked

1 package frozen green beans, cooked

1/2 cup mayonnaise or salad dressing

1/3 cup onion, minced

1/2 tablespoon Worcestershire sauce

1 1/2 tablespoons salad or olive oil

1 hard-boiled egg, chopped

1 small jar pimientos, drained and chopped

Preheat oven to 350 degrees. Spray large casserole with

cooking spray.

Cook peas, limas and green beans separately. Drain. Blend

mayonnaise, onion, Worcestershire, oil and egg. Heat. Pour

gently over vegetables. Bake about 15 minutes.

MICROWAVE: After all ingredients are in casserole, heat on

Medium for 5 minutes. Give half turn, Heat on High for 1

minute.

Makes 6 to 8 servings.

 

POPOVERS

1 cup flour, sifted

1/2 teaspoon salt

2 eggs

1 cup milk

1 tablespoon shortening, melted

Preheat oven to 425 degrees. Grease custard cups or muffin

tin for large muffins.

Beat all ingredients together until smooth. Pour into cups

- 1/3 cup full.

Bake 40 minutes.

Makes 6 large popovers.

 

RIBBON CAKE

3 cups cake flour (sifted before measuring)

2 cups sugar

3/4 cup shortening

1 teaspoon salt

1 1/2 cups milk

5 teaspoons baking powder

4 egg whites, unbeaten

1/2 teaspoon cinnamon

1/8 teaspoon cloves

1/8 teaspoon soda

2 tablespoons cocoa

2 tablespoons water

3 to 4 drops red food coloring

1/2 teaspoon vanilla

1/2 teaspoon butter flavoring

In large mixing bowl, combine flour, sugar, shortening, salt

and 1 cup milk - beat with electric mixer 2 minutes.

Add baking powder, remaining 1/2 cup milk and egg whites.

Beat for an additional 2 minutes. The batter will be smooth

and thin. Divide batter in 3 parts.

FOR DARK LAYER; Blend cinnamon, cloves, soda, cocoa and

water together. Blend with one part batter.

FOR PINK LAYER; Add food coloring and vanilla to one part

batter.

FOR WHITE LAYER; Add butter flavor.

Pour into 3 (9-inch) layer pans which have been rubbed with

shortening and dusted with flour.

Bake in 350 degree oven for approximately 25 minutes.

BUTTERCREAM FROSTING:

1/2 cup shortening

1/2 cup butter or margarine (1 stick)

1 teaspoon vanilla extract

1 pound box powdered sugar (4 cups)

4 tablespoons milk

With an electric mixer, cream shortening and butter or

margarine. Add vanilla and sugar, one cup at a time. When

all the sugar has been mixed in, the mixture will be very

dry. Add milk and beat until light and fluffy.

Makes 3 cups.

 

SUGGESTED ORDER OF PREPARATION:

1.

The cheese ball should be made at least 12 hours before

serving. This will give it a chance to season through, plus

form into the right consistency. Remember to remove it from

the refrigerator 15 minutes before serving.

2.

The cake should be made earlier in the day or perhaps the

night before. It will take you approximately 10 minutes to

mix the cake and 25 minutes to bake. Cooling time should be

at least 2 hours. Preparing the frosting, assembling and

frosting the cake will take approximately 25 minutes. If you

decide to border the cake with shell design using pastry

bag, add additional time. Total time from start to finish on

cake will be 3 hours.

Mix butter or margarine, garlic salt and parsley. Shape

into a stick and freeze for 1 hour (this should be done at

least 2 hours before serving time).

4.

Boil egg for Baked Green Casserole. You may also prepare

the three frozen packages of vegetables at this time.

Remember, each vegetable is to be cooked separately.

5.

Place cooked vegetables in prepared casserole dish. Set

aside.

6.

Prepare chicken. Do not bake at this point.

7.

Prepare and bake Popovers. Baking time is 40 minutes in a

425 degree oven. 8. This is a good time to serve your guests

the Amaretto Cheeseball with apple slices and celery. You

may want to serve Amaretto, champagne, whatever your

preference. 9. After the Popovers have been in the oven 15

minutes, add the chicken. Bake 15 minutes, turn and cook an

additional 10 minutes. Both dishes will be done at the same

time. 10. After you place chicken in the oven, make sauce

for vegetables. 11. Cook vegetables in microwave while

chicken is cooking it's last 10 minutes of oven time.
