CHILI RELLENO CASSEROLE:

1 large can whole green chilies

8 ounces American cheese

GUACAMOLE:

2 large avocados

TORTILLA CHIPS

REFRIED BEANS:

1 can refried beans

BUTTERMILK PRALINES:

1 small carton buttermilk

1 bottle corn syrup

1 pound shelled pecans

BEVERAGES (If needed)

CHILI RELLENO CASSEROLE

1 large can whole green chilies cut lengthwise and seeded

1 1/2 cup milk

1/4 cup flour

1/2 teaspoon salt

Dash pepper

8 ounces American cheese, grated

4 eggs, beaten

Preheat oven to 350 degrees.

Grease 1 1/2 quart casserole.

Mix milk, flour, salt, pepper and eggs.

Alternate in casserole, layers of cheese and chilies. Pour

batter over and bake for about 50 minutes.

GUACAMOLE

2 large avocados, peeled and seeded

1 tablespoon lemon juice

1 teaspoon Worcestershire sauce

1/4 teaspoon garlic powder

1/4 teaspoon garlic salt

1 tomato, chopped

1/4 cup onion, chopped

Mash avocados. Add lemon juice, Worcestershire, garlic

powder, garlic salt and tomato - mash until well blended.

Add onion and stir until well mixed.

Serve with chips.

BUTTERMILK PRALINES

3 cups sugar

1 cup buttermilk

1 teaspoon soda

2 sticks (1 cup) butter or margarine

1/4 teaspoon salt

2 tablespoons light corn syrup

1 teaspoon vanilla

4 cups pecans

Mix sugar, buttermilk with soda in it, butter, salt and

syrup in large saucepan. Cook until mixture reaches hard

ball stage - 250 to 260 degrees on candy thermometer. Add

vanilla, then pecans. Stir for a short time. Cool rapidly.

 

Spoon pralines on wax paper.

Makes 2 dozen.

 

SUGGESTED ORDER OF PREPARATION:

1.

Pralines may be made anywhere from the day before to 2 hours

before mealtime. They should be wrapped individually in

plastic wrap and stored in airtight container if they are to

be kept for several days.

2.

Begin casserole an hour before mealtime. It takes very

little time to assemble and 50 minutes to bake.

3.

While the casserole is baking, prepare Guacamole. I prefer

the tortilla chips microwaved on High for 1 minutes before

serving. This makes them crisper and fresher tasting.

4.

The refried beans may be heated on the stove or microwave.

Heat until warmed throughout - about 5 minutes on stove (be

sure to stir occasionally) or 2 minutes in microwave.

 

 

Very easy and fun. Guest as well as family will ask for

this meal again and again.
