SWEET-SOUR SHRIMP:

1 can chicken broth

2 cups fresh shrimp or 2 cans (4-1/2 ounces each)

1 package (7-ounces) frozen Chinese pea pods

GINGERBREAD MUFFINS:

1 carton (8-ounces) sour cream

1 jar molasses

2 ounces pecans or walnuts

1 box raisins

FRESH FRUITS AND/OR PURCHASED FORTUNE COOKIES

SWEET-SOUR SHRIMP

2 tablespoons cornstarch

4 tablespoons sugar

1 cup chicken broth (canned or saved from stewed chicken)

3/4 cup pineapple juice

1/4 cup vinegar

3 tablespoons soy sauce

1 tablespoon margarine

2 cups shrimp (if fresh, shell and clean) Canned may be used

(2 cans 4-1/2 ounces each)

1 7-ounce package frozen chinese pea pods, thawed

2 1/2 cups hot cooked rice

Blend cornstarch and sugar in medium saucepan. Stir in

chicken broth. Add pineapple juice, vinegar, soy sauce, and

margarine. Cook and continuously stir until mixture comes

to a boil.

 

 

Cover and simmer 5 minutes. Add shrimp and pea pods. Heat

thoroughly. Serve on hot rice.

Makes 4 servings.

 

 

 

 

 

GINGERBREAD MUFFINS

1 cup shortening

1 cup sugar

4 eggs

1 carton (8-ounces) sour cream

1 cup molasses

4 cups flour

1/2 cup pecans or walnuts, chopped

1/2 cup raisins

1/4 teaspoon cinnamon

2 teaspoons ginger

1/4 teaspoon allspice

2 teaspoons soda

1 teaspoon baking powder

Preheat oven to 375 degrees. Grease or spray with baking

spray 18 muffin cups.

Cream shortening. Gradually add sugar. Beat until light

and fluffy. Add eggs one at a time. Beat well after each

addition. Stir in sour cream and molasses.

Combine remaining ingredients in a medium bowl. Add to

batter and stir until just moist. Spoon into prepared

muffins pans. Fill half full. Bake 15 minutes.

Makes 18 muffins.

 

SUGGESTED ORDER OF PREPARATION€:

1.

About 30 minutes before mealtime, prepare muffins.

2.

Prepare Sweet-Sour Shrimp. While mixture is simmering,

prepare instant rice.
