TACO SALAD:
1 can pinto beans or 1 can refried beans
1 package (12-ounces) corn or tortilla chips
1 head lettuce
1 package longhorn or Cheddar cheese
1 large tomato or 1 small carton cherry tomatoes
1 bottle Catalina or French dressing
NOTE: You may use 1 pound ground beef, 2 cups cooked
cubed chicken, 1 onion and or flour tortillas deep
fried in place of corn or tortilla chips)

1 package unsweetened chocolate squares
2 ounces pecans
BEVERAGES (If needed)

TACO SALAD
1 can pinto beans, drained or 1 can refried beans
1 12-ounce package corn or tortilla chips
1 cup lettuce, chopped
1 cup longhorn or Cheddar cheese, shredded
10 small cherry tomatoes, quartered or 1 large tomato,
chopped
1 bottle Catalina dressing (8 ounces)
Combine the first 5 ingredients together. Gradually add
dressing.
NOTE: You may add 1 pound browned ground beef and onion
or 1 to 2 cups cooked cubed chicken. This is good served in
individual servings of flour tortilla "bowls" made by deep
frying flour tortillas in bowl shape.
2 large or 4 medium servings.
BROWNIES
1/3 cup shortening
2 squares (1-ounce each) unsweetened chocolate, grated
1/2 cup brown sugar, packed
2 eggs
2/3 cup flour
3/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup chopped nuts
1 teaspoon vanilla
Preheat oven to 325 degrees. Grease a 9-inch square pan.
Combine shortening, chocolate, brown sugar and eggs in
saucepan. Cook over low heat until shortening and chocolate
melts. Remove from heat, add eggs and beat well. Sift dry
ingredients. Beat into egg mixture. Stir in nuts and
vanilla until smooth. Pour into prepared pan.
Bake 25 minutes or until done. Cool on wire rack. Cut into
squares or bars.
Makes 2 dozen brownies.
SUGGESTED ORDER OF PREPARATION:
1.
Brownies may be made as little as 1 hour before serving time
or even the day before.
2.
It will take about 20 minutes to prepare Taco Salad.
