  • Brown Sugar Pie

    This french canadian pie is simply delicious and perfect for those who have a 'sweet' tooth!!!

  • 1½ cups brown sugar
  • 1 cup evaporated milk
  • 1 tablespoon flour
  • 1 egg, slightly beaten
  • 1 unbaked 9" pie crust
  • Mix the flour with the brown sugar in a saucepan. Add the evaporated milk and heat slowly, stirring occassionnally until sugar is completely melted. remove from heat. Add a small amount of the hot mixture to the beaten egg, beating well. Then add to the rest of the sugar mixture. Pour into the unbaked pie crust.

    Bake in hot oven at 400°F 10 minutes ; reduce heat to 350°F and bake 30 minutes more. Serve hot or cold.

    Maple Syrup Tartlettes


  • 20 mini-tart shells( 2") baked and cooled
  • 1/3 cup butter or margarine
  • 1/3 cup flour
  • 1 cup maple syrup
  • 3/4 cup milk
  • whipped cream or nuts


  • In a heavy pan melt the butter. Add the flour and cook 1 minute. Mix the mapley syrup and milk together and add slowly, stirring constantly to butter and flour. Cook until thickened on medium heat stirring continously.

    Pour into the cold tart shells and let cool completely. Decorate with whipped cream or nuts, as desired.

    Tourtiere

  • 1 lb ground porc
  • 1 lb ground veal
  • 1 lb ground beef
  • 1 1/2 cups hot water
  • 3 onions
  • 3 cloves garlic, minced
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cloves
  • 1/4 teaspoon cinamon
  • 1 teaspoon allspice
  • 1 egg, beaten
  • 2 tablesppons milk

    Place all the ingredients in a large casserol, except egg and milk. Brown the meat on high, then reduce heat and simmer 40-50 minutes, stirring occassionally. Add spices to taste. Cool the meat and divide into three pie shells. Cover with another crust. Mix milk and egg and spread over the crust of the pies before baking. Bake at 375°F.
