Red Cabbage Slaw
... a colorful
addition to a meal.
Chinese Salad
1 cup
sliced mushrooms
juice
of ½ lemon
2 cups
rice, cooked and cooled
2 cups
spinach leaves, washed and dried
1/3 cup
raisins
1 cup
bean sprouts
3 celery
stalks, sliced
1 green
pepper, cut in cubes
2 tablespoons
parsley, chopped
¼
cup green onions, chopped
1 cup
cashews
¼
cup soya sauce
½
cup oil
1 clove
garlic, chopped
Coat the
mushrooms with the lemon juice; place in a large salad bowl; add all the
other ingredients except the soya sauce, oil, and garlic.
In
a small bowl mix the oil, soya sauce and garlic. Pour over the salad; mix
well and let stand for an hour. Serve

Macaroni Salad
This
salad compliments any buffet; or delicious served with cold meats on the
patio!
2 cups
macaroni
½
cup celery, chopped
½
cup shredded carrots
1 green
or red pepper, chopped
3 green
onions, chopper
½
cup sweet pickles, chopped
½
cup green peas
salt
pepper
1 hard
boiled egg, sliced
½
cup mayonnaise
2 tablespoons
mustard (regular or Dijon)
juice
of ½ lemon
In a large
pot of boiling water, lightly salted cook the noodles 10 minutes; rinse
under cold water; drain well then place in a large salad bowl. Add the
celery , carrots, green or red pepper, onions, pickles and peas.
In
a small bowl mix the mayonnaise, lemon juice and mustard. Add to the macaroni.Add salt and pepper to taste. Decorate with the hard boiled egg.

Potato Salad
4 large
potatoes, cooked and cubed
1 small
onion, finely chopped
½
green pepper, cubed
½
red pepper, cubed
1 stalk
celery, finely chopped
2 green
onions, finely chopped
2 tablespoons
parsley
salt
pepper
2 tablespoons
mayonnaise
3 tablespoons
oil
1 tablespoon
vinegar
In a salad
bowl gently combine the vegetables et the parsley. In a small bowl mix
the mayonnaise, oil and vinegar; pour over the salad and gently mix. Add
salt and pepper to taste. refrigerate a few hours before serving.

Red Cabbage Slaw
This
colorful salad is so easy to make, you'll never want to buy already made
salad! This salad can even be conserved a few weeks.
1 small
head red cabbage, shredded
1 small
onion, chopped
2½
teaspoons salt
½
cup oil
¾
cup sugar
¾
cup white vinegar
Mix the
cabbage, onion and salt. Bring the oil, vinegar and sugar to a boil. Pour
the hot mixture over the cabbage; do not stir. Cool. Cover and refrigerate.
