Let's start with some chili with a bite:

Skinner Texas Rattlesnake chili

In 5 qt. saucepan or Dutch oven, heat oil and saute onion, greenpepper, and garlic until tender but not brown. Add ground beef and rattlesnake meat (chicken); saute until done, about 5 minutes. Stir in spices, tomatoes, and tomato paste. Bring to a boil, cover, then reduce heat and simmer about 2 hours. before serving, add water and return chili to a boil. Stir in uncooked pasta; continue boiling, stirring frequently, 10-15 minutes or until pasta is tender.
Makes about 6 servings

Corn Fritters

Combine the flour, granulated sugar, baking powder,and salt in a medium mixing bowl. Add milk, egg, margarine or butter, and corn. Stir just till moistened. Drop batter by tablespoons, about 4 at a time, into deep hot fat(365 degrees). Cook for 4-5 minutes or until golden brown, turning once. Drain on paper towels. keep fritters warm by placing on a baking sheet in a 300 degree oven while frying remaining batter. Serve warm dusted with powdered sugar.
Makes about 12 fritters.



Taco Salad Deluxe

Brown ground round steak and season with oregano, to taste. Add kidney beans to meat. Set aside. Combine corn chips and cheese. Set aside. Combine tomatoes, onion, and lettuce and set aside. Combine taco sauce and dressing and set aside. In a large bowle, arrange above ingrediants in this order: meat and bean mixture; lettuce,tomato, and onion mixture; and combined dressing and taco sauce. Just before serving, add shredded cheese and corn chips.
