4 split chicken breasts 1/3 C Italian salad dressing 2/3 C uncooked rice (not instant) 1 bag frozen mixed vegetables. (I use broccoli, cauliflower & carrots) 1 can durkee onion rings 1 3/4 C chicken broth 1/2 tsp Italian seasoning
Place chicken in a 9x12 casserole dish. Pour salad dressing over chicken. Bake uncovered at 400 degrees for 20 min. Take chicken out of dish, place rice, chicken broth and seasoning in dish. Place chicken on top. Spread veggies around chicken and 1/2 can of durkee onions. Bake uncovered for 25 more min. Remove from oven and top with remaining onions, return to oven 3-5 min or until onions have browned. Let stand 5 min. before serving. |
