Carmelized Onion Focaccia

This is my personal favorite!

3/4 C Water
2 TBS Olive or Vegetable Oil
2 C Bread Flour
1 TBS sugar
1 tsp salt
1 1/2 tsp bread machine yeast

Place all ingredients in breadmachine in the order recommended by the manufacturer of your machine.
Select Dough Cycle.

Meanwhile, prepare onion topping.
Slice 2 med sized onions about 1/4" thick. Place in skillet with approx. 3 TBS oil or butter (I have tried both) and 2 cloves of garlic, finely chopped.
Heat onions on med. heat till light brown turn of heat and let cool.

When dough is ready, take out of bread machine pan and let rest on a floured surface for 15 min. Pat dough into a 12" pan, sheet pan or pizza pan.
Let rest for 1/2 hr.
Make deep impressions in dough with fingers. Spread onion topping over dough and top with 2 TBS fresh parmesan cheese and  3/4 C shredded mozzarella cheese.
Bake for 15-18 min at 400 degrees until edges are golden brown. Remove from sheet onto a wire rack. Cut into wedges and serve warm. (This is great re-heated)
