ANZAC
BISCUITS (Cookies)
Aussie Mothers baked these & sent
them off to war in airtight packages to loved ones and
sometimes in parcels addressed simply : "TO A SOLDIER"
They travel and keep well... and taste good too!
1 cup Rolled Oats
1 cup AP (Plain) Flour
1 cup sugar
3/4 cup coconut
4 oz (125g) butter
2 tablespoons golden syrup
1/2 teaspoon baking soda
1 tablespoon boiling water
Combine oats, sifted flour, sugar and coconut in a large
bowl.
Combine butter and Golden Syrup
and stir over gentle heat until melted.
Mix soda with boiling water, add to butter mixture and
stir into dry ingredients.
Lightly grease cookie sheet and place teaspoons of mixture,
allowing room to spread.
Cook in a slow oven for approx. 20 minutes. Loosen while
warm, leave to cool. Makes about 35 AND NOPE,
SORRY - THERE'S NO REAL SUBSTITUTE FOR GOLDEN SYRUP

BEER
BREAD
3 cups self-raising flour
1/4 cup sugar
1 pinch salt
1 can beer
Directions
Note: instead of yeast, the beer is used.
Heat your camp oven over hot coals (or frying pan).
Of if ya must LOL - preheat your conventional oven
- and we won't tell Grandma :)
Mix all ingredients together forming a semi-dry dough,
then place in floured camp oven. or in a greased &
floured bread pan
Cook for 30-40 minutes. (Camp oven) or
Bake at 350 for 50-65 minutes (conventional)
Tear it apart, spread it with butter, honey, or whatever
you fancy..and there ya go!
This
bread is great with a barbecue - goes stale very quickly,
but usually doesn't last that long :)

LAMINGTONS
4 oz Butter
1 Teaspoon Baking Powder
¾ Cup Castor Sugar
½ Teaspoon Baking Soda
1 Teaspoon Vanilla Essence
4 Eggs
2 Cups Flour
½ Cup Milk
Pinch Salt
Cream the butter and sugar, add the vanilla essence
and the eggs and mix
in. Now fold in the dry ingredients
adding the milk gradually as you go.
Spoon the mix into a flat cake tray
and bake in a pre-heated oven at
350 degrees
for approximately 45 minutes.
Allow to cool and store overnight
then cut into squares approximately
2 inches square, dip into chocolate
icing (thin frosting) and roll in coconut.
Now you CAN cut to the chase and
use store bought sponge or pound
cake, or take the middle road and
make one with Betty Crocker.. but
it's just not the same :).

PUMPKIN
SCONES
(BISCUITS)
1 Tablespoon Butter
1 Cup cooked and mashed Pumpkin
(You can use a can of pie filling
if you MUST)
1 Egg
1 Pinch Salt
2 Cups Self Raising Flour
Blend and cream together the Butter
and Sugar, add the egg and beat well, then add the
pumpkin, flour and salt
fold in by hand if necessary. Knead
lightly and divide into rough squares (about 2 inches).
Place fairly close together on a cookie sheet and
bake for about 15 18 minutes
(until golden on top) in a 425 degree pre-heated oven.
