Helen's Chilli Recipe .....
For 4
1 aubergine (peeled and finely chopped)
2 red peppers (diced)
2 carrots (diced)
2 onions ( chopped)
1 red chilli (chopped)
1 green chilli (chopped)
2 tablespoons oil
1 can kidney beans (drained)
1/2 pint stock
1 can tomatoes
3 tbsp tomato puree
To serve:
Tacos or tortillas, Olives, Pickled Chilli, Grated cheese, Soured
Cream, Lettuce, Guacamole, Salsa
- Heat oil and fry onion and carrots for five minutes. Add aubergine
pepper, and chillies and cook for another 5 minutes
- Add tomato puree, tinned tomatoes and stock. Season with freshly ground
black pepper. Simmer for 30-450 minutes
- Stir in beans and cook for a further 10 minutes.
- Serve hot in taco shells or tortilla sprinkled with grated cheese,
olives, soured cream etc.
