PASTA AMATRICIANA Contributed By: Joy Peteros Ingredients: 500g (1lb) bucatini or other tubular pasta 125g (4oz) grated fresh Parmesan - Spicy Sauce - 2 tbsp. olive oil 250g (8oz) bacon, cut into strips 1 small fresh or dried red chilli, finely chopped 1 small onion, chopped 500g (1lb) tomatoes, peeled, seeded chopped Salt Black pepper, ground Cooking Directions: 1. To make sauce, heat oil in a frying pan over moderate heat and cook bacon until crisp. Drain and set aside. 2. Add red chilli and onion to pan and saute until onion is soft. Stir in tomatoes, season to taste and simmer for 10 minutes. 3. Cook pasta in a saucepan of boiling salted water until ??? ????. Drain and place in a serving dish. Add bacon to sauce, heat for 2-3 minutes and pour over pasta. 4. Sprinkle with parmesan cheese.
