SWEET AND SOUR LIVER Contributed By: Joy Peteros Ingredients: 625g (1 1/4lb) calves or lambs liver, thinly sliced Salt Freshly Ground Black Pepper 125g (4oz) dried breadcrumbs 2 tbsp. olive oil 3 cloves garlic, crushed 1 tbsp. sugar 3 tbsp. wine vinegar 1 tbsp. finely chopped fresh mint Cooking Directions: 1. Season liver with salt and black pepper to taste, then press into breadcrumbs to coat both sides. Heat 1 tbsp. oil in a frying pan over moderate heat, add liver and cook for 2-3 mins. each side or until cooked to your liking. Transfer to a serving plate and keep warm. 2. Heat remaining oil in same pan over moderate heat and cook garlic and sugar, stirring, until caramelized, taking care not to let the mixture burn. Add vinegar and simmer until sauce reduces by half. Stir in mint, spoon sauce over liver and serve.
