TOMATO AND BASIL SALAD Contributed By: Joy Peteros Ingredients: 2 large tomatoes, chilled and sliced 90g mozzarella cheese, sliced, optional 3-4 spring onions, chopped 6 fresh basil leaves, shredded or 1/2 tspn. dried 90ml olive oil 2 tbsp. wine vinegar or fresh lemon juice Salt Ground black pepper Serving Directions: 1. Arrange tomatoes symmetrically on a chilled serving dish, alternating with mozzarella cheese. Sprinkle with spring onions and basil. Just prior to serving, drizzle oil and vinegar or lemon juice over salad and season to taste with salt and black pepper.
