Spinach alla Giudea

This treatment is a free-form interpretation of a fairly typical preparation of vegetables among Italian Jews. It's a bit unusual, but if you get sick of all your veggies being the same, this is the way to go.

Mix everything but the oil together and cook; add the oil at the end. I prefer steaming or microwaving; if you do the former, you should add the balsamico with the oil.

You can do this with pretty much any other green sort of vegetable; I've also done it with green beans, for example.
