Sausage Joe
A variation on the old San Francisco breakfast scramble known as Joe's Special. Serves 4-6, depending on what you have with it.
- 9 eggs, beaten w/ 1/4 c milk and salt & pepper to taste
- 1 lb spinach, frozen or parcooked
- 1/2 lb sweet Italian sausage meat
- 1 medium onion, chopped
- 1 clove garlic, crushed or minced
- 1/2 tsp oregano or to taste
- 1/2 tsp unsalted butter
- Olive oil as necessary
Brown the sausage meat in a nonstick pan on medium to medium-high heat, breaking it up into pieces as small as possible. Add the onion along with a small pinch of salt (and a bit of olive oil, if not enough fat renders out of the sausage) and cook until translucent, then add the garlic, cook for a minute or two, then add the spinach and butter (if the spinach is frozen, cover the pan and cook for a while, stirring occasionally until spinach is thawed out and heated through). Add beaten egg mixture to sausage mixture and cook, stirring frequently. Serve with your favorite breakfast accompaniments.
