6 small zucchini, unpeeled, cut into chunks.
1 large onion, chopped.
1 1/2 tsp curry powder.
1/2 tsp fresh ginger.
1/2 tsp dry mustard.
3 cups chicken broth.
3 tbs uncooked rice.
1 1/2 cup milk or cream.
Salt and pepper to taste.
Garnish with chives.
Combine zucchini, onion, curry, ginger, and mustard in sauce pan.
Add broth and rice and bring to boil.
Cover and simmer about 45 minutes.
Puree the mixture in a blender. Add cream and seasoning.
My husband likes the way this tasty soup looks in his soup bowls! May be served chilled or hot.
