Bananas Foster

1 whole banana, peeled and sliced on the bias 
1 vanilla bean, split in half 
3 tablespoons butter 
3 tablespoon Dark Rum 
3 teaspoon brown sugar 
Pinch cinnamon 
Pinch grated nutmeg 
Fresh mint sprigs 
Powdered Chocolate (optional)

Now for the fun!

In a hot sautuse put the butter, split bean and bananas.
Make sure the butter does not burn.
When the bananas have softened add the brown sugar and spices.
Scrap the vanilla bean into the pan and discard. 
After the sugar has melted remove the pan from the heat and add the rum. 
If you do not remove the pan from the heat you may well lose any hair from 
the front of your person. If the pan has not flamed then touch with a match.
Allow the flame to reduce and serve over your favorite ice cream.
Sprinkle with chocolate powder. Garnish with mint leaves.
