THINGS.
Oatmeal Squares.
1/2 cup melted margerine, 1 cup brown sugar
2 cups rolled oats ,1 tspn. baking powder ,vanilla
to your tastebuds limit
Mix everything in a shallow metal cake pan. I
make double the recipe in a 6 by 9 pan. Make sure the mixture is churned
appropriately. Bake in a 350 degree F. oven for 15 minutes. Too long and
they're brittle, too short and you have to use a spoon to eat them, just
right and they are heavenly with a cold glass of milk.
Bannock Bread
3 cups of flour , 1/2 tspn. salt, 1 tblspn. baking
powder, 1 cup milk, bit of margerine for the pan.
Mix ingrediants, adding more liquid if needed.
Batter works better moist. Cut in half and spread out in frying pan. Add
stuff in the middle, raisins, nuts, whatever. Spread second half over the
first with a large spoon greased with marge. Cover and cook over medium
low heat for a bit. Flip and cook the second half for another bit. If its
thick the middle will take a while to cook. Sometimes the top doesn't stick
to the bottom so be careful flipping in midair. Kids love it.
Hot Bisuits
2 cups of flour, 4 tsp. baking powder, 1/2 tsp.
salt, 4 tblspn. shortening or marge, 1 cup of milk.
Mix and knead making the batter more dry than
wet with extra flour. Cut into biscuit sized circles using something like
a penut butter jar lid with a little air hole poked in it. Bake at 450
degrees F. for 12-15 minutes. They're even good the second day but keep
them covered or else they're only good for hockey pucks.
Absolute Killer Dessert aka Strawberries
and Cream, Sandra Bullock's Favorite Dessert
1 can sweetened condensed milk, 1 1/2 cups cold
water, 1 pkg. instant pudding mix, 2 cups whipped cream (or 1 pkg. Dream
Whip), 1 pkg. (298 g) poundcake, 4 cups strawberries or more, toasted almonds
or kiwi.
Combine sweetened milk and water then mix in
pudding and chill until set. Overnight is great. Fold in whipped cream.
In a large fancy glass bowl, put in layers of: pudding mixture, 1/2 cubed
cake, berries, pudding, other half of cake cubed, berries, pudding. Decorate
with kiwis or mix them in. Almonds on top or in. Oink out.
Fiddle Diddles
This is a no-bake treat that kids and adults love, in my case far too much!
Heat half a cup of hard margerine (as opposed to the soft kind), 2 cups of granulated sugar and half a cup of milk in a saucepan until the mixture boils, stirring it often.
Meanwhile, mix together 6 tablespoons of cocoa, 3 cups of quick oats (not instant), half a cup of coconut, a pinch of salt and a teaspoon of vanilla.
Add the boiling liquid mixture to the dry material and mix it all well. Then you can either drop spoon size bits onto a large tray or smooth the whole mixture in a thin layer on something like a pizza pan, slicing the layer into squares when cool. Either way, once the hard marg resets, you can pick the pieces up and just pop the damn things in. A really tasty treat.
