Meat layer
Cook one pound of hamburger meat with onions, oregano, parsley, thyme, pepper. When cooked, add tomato sauce or diced tomatoes and continue cooking until smooth. This is the bottom layer, add it level in the bottom of your casserole dish.
Eggplant layer
Slice eggplant and fry or grill until golden brown. Lay the eggplant slices on top of the meat layer in the casserole.
Custard
1/3 cup butter
1/3 cup flour
2 cups milk
2 eggs
1/2 cup grated parmesan cheese
In a small pot, melt the butter, add the flour and cook over a very low heat. Add the milk very slowly while continously stirring. Cook until the mixture boils and thickens a little bit. Remove from the heat. Add the eggs and the cheese, beat the mixture so that it is smooth. Pour on top of the other layers.
Cook
Bake in a preheated oven at 325 for 45 minutes or until topping is golden brown. Remove from the oven and let it sit for 5 minutes before serving.
