4 Chicken Breasts, boned
2 tbl Olive Oil
2 cloves Garlic, crushed
1/2 tsp Red Pepper Flakes
1/2 cup Sun-Dried Tomatoes, diced
4 Plum Tomatoes, chopped
1/3 cup Vodka
1/2 cup Half&Half
Dry Jack Cheese, shredded

Brown the Chicken in Olive oil. Add Garlic and cook 2
minutes on medium-high heat. Add Pepper Flakes and both
kinds of Tomatoes. Simmer until Chicken is firm. Remove
the Chicken Breasts to a warm platter.
Add Vodka and Cream to skillet and simmer until the sauce thickens.
Serve Breasts with Sauce on top and a handful of the shredded Jack Cheese.
(This dish can also make a good pasta meal.)
