Crab Cakes Maryland

This recipe was adapted from Jeff Smith's book, 'Jeff Smith Cooks American.'

2 tbl Parsley, chopped
1 tsp Dry Mustard
1 tsp Worcestershire Sauce
Dash of Tabasco
2 Eggs, beaten
2 tbl Mayonaise
1 lb Cooked Crab Meat
1 cup Bread Crumbs
Salt & Pepper to taste
Flour for dredging

Mix the first 6 ingreditents together. Add Crab Meat and Salt & Pepper to taste. Divide into 8 cakes and dredge well in Flour.
Pan-fry on both sides in Butter/Olive Oil until browned.
Serve warm with a wedge of lemon and a sprig of Parsley.
