Favorite Holiday Recipes
Mother died March, 1996. This is our first Christmas without her. Sharing some of her holiday recipies (and some of my own) is my way of keeping her alive. It feels good to share some of the delicious happenings of my childhood with you. Enjoy!
Mother's Spice Nut Raisin Cake
Beat together:
2 cups sugar
1 cup shortening
2 eggs
Add:
2 cups applesauce
2 tsp soda
1 tsp cinnamon
1 tsp allspice
1 tsp cloves
sifted with 3 cups flour
Stir in:
1 cup chopped nutmeats(I love black walnuts!)
1 cup raisins(I prefer chopped dates)
Mother was not exact about how long to bake this cake but I bake it at 350 degrees for about an hour in a tube pan.

Cook to soft ball stage:
....2 cups white sugar
....1/2 cup cream or pet milk
1 tbs butter
Add:
....1 cup pitted dates
....1 cup nutmeats
Cook 5 minutes more stirring constantly with heat turned low.
Beat until stiff and put on wet cloth by spoonfulls.
Shape into long rolls and roll in powdered sugar.
Put in refregerator to set. Then slice as desired.
Mother's Peanutbutter Roll
2 cups granulated sugar
1 cup brown sugar
1 cup evaporated milk
1/4 cup corn syrup
dash salt
peanutbutter
Butter sides of heavy 3 qt. saucepan. In it, combine sugars, milk, corn syrup & salt. Heat over medium heat, stirring constantly until sugars dissolve & mixture comes to boiling. Then cook to soft-ball stage (236 degrees), stirring frequently.
Immediately remove from heat & cool to lukewarm (110 degrees) without stirring. Beat until fudge begins to hold its shape. Turn out onto a buttered surface. Knead fudge until you can shape it, keeping hands well buttered.
Roll into rectangle. Spread with peanutbutter. Roll like jelly roll. Chill until ready to slice.
Cut in 1/2" slices. Makes 28 pieces.
Note: Mixture will curdle while cooking but becomes smooth when you beat it.
Mother's Peanut Brittle
2 cups white sugar
1 cup white syrup(Karo)
1/2 cup cold water
2 cups raw peanuts
1 tbs vanilla
1 rounded tsp soda
1/2 stick or 2 tbs margarine
Cook sugar, syrup and water.
Add raw peanuts and cook until golden brown (stir continually)
Remove from fire, add vanilla and butter.
Pour on buttered cookie sheet to cool.
Mother's Divinity
4 cups sugar
3.4 cup white syrup
3/4 cup hot water
dash salt
3 egg whites, stiffly beaten
1 tsp vanilla
nutmeats (if desired)
Cook syrup, sugar, salt & water to hard boil stage or until mixture spins a thread or flies out from the spoon.
Add to stiffly beaten egg whites gradually & continue beating until batter is done. Add nuts and vanilla.
Pour into dish and let set. Then cut into squares.
Mother's Mincemeat for pies
3 pounds beef, chopped
1 1/2 pounds beef suet, chopped
6 pounds apples, chopped
3 pounds seedless raisins
2 pounds currants
1 pound citron, chopped fine
grated rind of 1/2 lemon
grated rind of 1/2 orange
2 tbs ground cinnamon
1 tbs ground cloves
1 nutmeg, grated or 1 tbs ground nutmeg
3 pounds brown sugar
1 qt boiled cider
1 qt molasses
salt to taste
Cook above ingredients slowly for 2 hours
Put in jars and seal
