When you have loads of apples and want something warm and comforting this recipe will make you happy. We freeze most of this rather large recipe for the topping to have it handy any time. When you can get pears that are about as solid as the apples, add them to this recipe for a nice mingling of flavours.
Ingredients (Topping for 3 apple crumbles for 2 people)
- 1 cup plus 2 tablespoons unsalted butter, at room temperature
- 1/4 cup brown sugar, packed
- 2 tablespoons sugar
- 1 egg
- 1 teaspoon vanilla
- 1 3/4 cups all purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon nutmeg
Ingredients (Fruit for 1 apple crumble for 2 people)
- 3 cups diced & cored, but not peeled, apples
- 1 cup diced & cored, but not peeled, pears (when you can find them)
- juice from 1/2 lemon
- sprinkle of sugar
- sprinkle of cinnamon
- 1/4 cup toasted, chopped pecans or walnuts
Instructions for Crumble Topping
Cream butter and sugars together in a large bowl. Beat in egg and vanilla.
Combine flour, baking powder, salt, and nutmeg together in a medium bowl.
Add dry ingredients to butter mixture and mix until just blended.
Divide into 3 equal portions. Wrap each portion and put in fridge for at least 1/2 hour if you will be making the apple crumble immediately, or wrap well and freeze for future use.
Instructions for baking Apple Crumble
Preheat oven to 375 degrees F.
Toss diced apples and pears with lemon juice in a baking disk. Sprinkle a little sugar and cinnamon over top of the apples and pears.
Bake fruit for 30 minutes at 375 degrees F then remove from oven.
Sprinkle chopped nuts over top of the apples and pears.
Grate 1 of the 3 portions of crumble topping over apples and pears using a cheese grater. Grate the topping quickly as it will start to melt in your hand and become hard to work with if it warms up too much.
Bake for another 30 minutes at 375 degrees F.
Serve warm with ice cream.
