Some years the strawberry season sneaks up and attacks with a huge amount of berries ready all at the same time! This recipes will help use up the berries that do not look so perfect, but still taste wonderful. We recommend local strawberries - ones that grow where you live taste the best!

Ingredients (makes 12 muffins)

  • 2 eggs
  • 2/3 cup sugar
  • 1/2 cup milk
  • 1/4 cup plain yogurt
  • 1 teaspoon vanilla
  • 1/2 cup unsalted butter, melted and cooled
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/2 cup strawberries, cut into pieces

Instructions for Strawberry Muffins

Preheat oven to 375 degrees F. Grease muffin pans.

Whisk eggs and sugar together in large bowl. Blend in milk, yogurt, vanilla, and melted butter.

Combine flour, baking powder, salt and cinnamon in a medium bowl.

Pour liquids into solids and stir gently until just combined.

Add strawberries and mix until just covered.

Spoon into muffin pans.

Bake at 375 degrees F for 25 minutes or until toothpick inserted comes out clean.
